  • 1/2 cup pearl (Israeli) couscous
  • 1/2 cup water
  • 1 teaspoon minced garlic
  • 1/4 cup chicken broth
  • 1 cup canned chickpeas (garbanzo beans), rinsed and drained
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons crumbled feta cheese
  • 1 1/2 teaspoon lemon juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon dried oregano

Instructions
 

  • In a large saucepan, mix the water with chicken broth. Add the garlic and cook on high until fragrant. Add the pearl casserole, cover, and cook for 5 minutes. Remove from heat. Let couscous stand for 5 minutes to absorb water. Fluff couscous with a fork and let couscous cool to room temperature.
  • Combine couscous and chickpeas in a large bowl, followed by sun dried tomatoes and olives, topped with feta cheese.
  • In a small bowl, combine white wine vinegar and lemon juice with oregano and black pepper. Drizzle over the couscous and toss again.
